Instructions
  1. Preheat oven to 180 degrees Celsius.
  2. Cut avocados in half, lengthways.
  3. Remove seeds
  4. Scoop out a small amount of the avocado flesh and place halves in a baking tray, skin down.
  5. Mix cream, chives, salt and pepper and scoop a spoonful into the hollow of each avocado half.
  6. Crack an egg into each half and top with chilli flakes or paprika.
  7. Bake in a oven for 15-20 minutes.
Recipe Notes

Notes: For a non-vegetarian option, finely dice some organic bacon and include in the cream mix before adding the egg.  Cooking time remains the same.
