2 cups oats 4 large bananas the more overripe the better 100 grams butter melted 2 large eggs 2 scoops protein powder 1/3 cup milk 1/3 cup maple syrup optional 1 tsp bicarbonate of soda 1/2 tsp rock salt 1 tbsp cinnamon
Instructions
- Pre-heat oven to 180 degrees and grease a 9" x 5" loaf pan.
- Put the oats into a food processor and blitz until a flour consistency is achieved. Add the bicarb soda, salt, cinnamon and protein powder and blitz again.
- Add the banana, milk, eggs and butter and mix until all the ingredients are completely combined.
- Taste the mixture and if not sweet enough, add the maple syrup.
- Spoon the mixture into the loaf pan and cook for 50 minutes or until completely cooked through.
- Serve with butter or fresh whipped cream and berries.
