250 grams tomatoes 1 large avocado 100 grams cucumber 250 grams baby bocconcini 200 grams spinach leaves 50 grams toasted seeds eg sunflower, pumpkin, pine nuts
Instructions
- Add all ingredients except leaves and seeds to a bowl, toss.
- Plate up over leaves, drizzle with olive oil and sprinkle with seeds and or nuts.
