1 Large Head of broccoli Cut into florets 2 Medium Lebanese cucumbers Cut roughly into large pieces 4-6 Roma tomatoes Roughly chopped 2 Medium Carrots Thinly sliced 1 Medium avocado 1 Block Feta of choice Diced or crumbled 1 Small handful pumpkin seeds 1 Small handful sunflower seeds Cobram garlic infused olive oil (To taste) salt and pepper To taste
Instructions
- Lightly steam broccoli and set aside to cool
- Toss tomatoes, carrots and cucumber in a bowl
- Add in broccoli and toss
- Plate up mixtures and top avocado
- Add a denerous amount of feta and seeds on top
- Drizzle a good amount of infused oil on top and add salt and pepper to taste
