  1. Cover the jacket potatoes in aluminium foil and place into a pre-heated oven (180 degrees Celsius) for 20-30 minutes or until they are completely cooked through and soft
  2. While the potatoes are cooking, grate the cheese and thinly slice the shallots
  3. Once the potatoes are cooked cut into quarters (not the whole way through) and fill with butter, sour cream, cheese and shallots.
