Instructions
  1. Melt butter over a hot pan.
  2. Throw all veggies into the pan with soy sauce, chilli, ginger, lemongrass and curry paste and cook through. Add water chestnuts.
  3. Add ¾ of coconut cream and stir through, adding the remainder of the curry paste or coconut cream to taste.
  4. Toss in almonds and stir through. Simmer for 30-40 minutes.
  5. Serve on a bed of cauliflower rice.
